  • 6 Thick-cut boneless pork chops
  • 15 oz. ricotta cheese
  • 8 oz. cream cheese
  • 3â�„4 cup Parmesan cheese
  • 1 egg
  • 3â�„4 oz. fresh basil
  • 2 shallots or one small onion
  • 2 cloves garlic, crushed
  • Salt
  • Pepper
  • 1 cup roughly chopped spinach
Preheat grill to 400 degrees.
Butterfly the pork chops and pound thin. Put the remaining ingredients together in a bowl and mix well. Spoon the filling onto the pork chops and fold pork chop over, securing with a skewer if necessary. Grill until done, turning onece, about 7-10 minutes per side. Spoon filling on top if desired.
