7-Layer Salad for a large group

  • 8 heads lettuce
  • 3 bunches celery
  • 10 red onions, sliced thin
  • 5 cans baby peas
  • 1â�„2 gallon mayonnaise
  • 2 cups sugar
  • 5 cups bacon bits
  • 5 cups shredded cheddar cheese
Shred lettuce and place in five large, 3-inch deep pans. Chop celery and divide between the five pans. Slice onions and divide between five pans. Drain peas and sprinkle over the other ingredients in the pans.
Mix sugar with mayonnaise and spread over salad mix of each pan. Sprinkle one cup of bacon bits and one cup of cheese on top of the mayonnaise layer in each pan. Refrigerate overnight and serve on chilled plates. Serves about 100-120.
