CHOCOLATE MINT JULEP CAKE

Ingredients:
  • 1 box dark chocolate cake mix
  • 3 eggs
  • 1/2 cup cooking oil
  • 1/2 cup water
  • 3/4 cup bourbon
  • 1/2 cup mint chocolate chips
  • 1 tub whipped topping
  • 1 TBS mint extract (or to taste)
  • Fresh mint
Mix together the cake mix, eggs, oil, water and bourbon and bake as directed on cake mix package. Remove the cake from oven and immediately sprinkle with mint chocolate chips so that they melt into the top of the cake. Lightly blend together the whipped topping and mint extract; do not overmix or the mixture will become runny. Spread the whipped topping mixture onto the fully cooled cake and garnish with fresh mint.
