  • 1â�„3 cup solid shortening
  • 1â�„2 cup creamy peanut butter
  • 1 cup sugar
  • 1â�„4 tsp. salt
  • 2 eggs
  • 1 tsp. vanilla
  • 1 cup sifted all-purpose flour
  • 1 tsp. baking powder
  • 1 cup flaked coconut
  • Confectioner’s sugar, for coating
Blend shortening, peanut butter, sugar, salt, eggs and vanilla. Add in flour and baking powder. Stir in coconut. Spread in greased 8- by 12-inch pan. Bake for 25 to 30 minutes. Cut into 11�4- by 21�2-inch strips while still warm, and roll each strip in confectioner’s sugar.
