Chocolate Cupcakes

  • 1â�„2 cup shortening
  • 2 cups sugar
  • 2 large eggs
  • 4 TBS baking chocolate powder
  • 1 tsp. vanilla
  • 2 cups all purpose flour
  • 1 tsp. salt
  • 1â�„2 tsp. baking powder
  • 1 tsp. baking soda
  • 3â�„4 cup milk
  • 3â�„4 cup water
Preheat oven to 300 degrees. Line cupcake pans with paper liners.
Cream together shortening, sugar, eggs, baking chocolate powder and vanilla. Add flour, salt, baking powder and baking soda; blend on low speed for two minutes, adding milk and water slowly as you go.
Fill liners 2�3 full and bake for 20 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes in pans, then remove from pan and cool completely. Frost when completely cool.
