  • 1 box yellow cake mix
  • 1 (3.4 oz.) box instant vanilla pudding
  • 3 eggs
  • 1â�„3 cup vegetable oil
  • 3â�„4 cup water
  • 3 cups cooked sweet potatoes, mashed
  • 3 tsp. pumpkin pie spice
Preheat oven to 350 degrees.
Mix all ingredients together until smooth. Pour into a greased tube pan and bake 50 to 60 minutes. Cake is much better if it has been frozen and then sliced. It will keep for up to six months in the freezer.
