  • 2 cups sugar
  • 1 cup cooking oil
  • 3 eggs
  • 11â�„2 tsp. baking soda
  • 3 cups all-purpose flour
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 3 cups chopped apples
  • 2 TBS vanilla flavoring
  • 2 TBS orange juice
  • 1 cup black walnuts
  • 1 cup raisins
Preheat oven to 350 degrees.
Mix the sugar and oil together; add eggs one at a time, mixing after each addition. Sift together the baking soda, flour, salt, cinnamon and nutmeg; sift two more times together.
Add apples to the oil mixture and stir, then add the dry mixture to the wet mixture; stir until combined. Add the vanilla and orange juice and mix well. Roll nuts and raisins in about two tablespoons of flour and fold into cake batter. Pour into a greased cake pan and bake for 11�2 hours or until done.
