PASTA SAUCE

Ingredients:
  • 2 to 3 quarts whole tomatoes
  • 1â�„4 cup fresh oregano
  • 1â�„4 cup fresh marjoram
  • 1â�„4 cup fresh thyme
  • a little minced garlic
  • 2 TBS olive oil
  • 1 TBS sugar
  • 1 lb. ground round or minced pork, optional
Cook tomatoes with herbs, olive oil and sugar until it gets to a runny, saucy consistency. Cover pot and let simmer for two hours. Take off lid and keep cooking. Add meat if desired. Sauce should cook for at least 10 or 11 hours for best flavor.
