PINTO BEAN CASSEROLE
Vegetables & Side Dishes

Ingredients:
  • 1 lb. ground beef
  • Green pepper, to taste
  • Onion, to taste
  • 1 (16 oz.) can diced tomatoes
  • 1 (16 oz.) can pinto beans
  • 1 package corn bread mix and ingredients called for on the package
Preheat oven to 350 degrees.
Brown the ground beef, green pepper and onion in a skillet; drain. Add the tomatoes and pinto beans; simmer for 10 minutes. Pour the mixture into a casserole dish. Mix the cornbread according to package directions and pour on top of beef mixture. Bake for 20 minutes or until top is golden.
