SWEET CUCUMBER AND MANDARIN ORANGE SALAD

1 medium cucumber, peeled and sliced into very thin rounds
1 (11 oz.) can Mandarin oranges, drained
1 medium Vidalia onion, sliced into very thin rings
2 tsp. granulated sugar
1â�„3 cup distilled white vinegar
1 tsp. fresh tarragon, chopped
Salt and freshly ground pepper, to taste
In a serving bowl, combine the cucumbers, mandarin oranges and sweet onion rings.
In a small bowl, stir together the sugar and vinegar until the sugar dissolves. Pour over salad and toss well. Add the chopped tarragon. Season with salt and pepper.
