  • 4-6 ripe plantains (their peels should be mostly black)
  • Cooking oil
Peel plantains. Cut fruit in half crosswise and lengthwise. Heat 1�2 inch oil in skillet. Add the plantains, a few at a time, and sauté until lightly browned. Turn and sauté the other side of each piece. Remove to a towel-lined plate and sauté the rest of the pieces. Sprinkle with a little salt and serve hot.
