  • 3â�„4 cup seasoned rice vinegar
  • 1 TBS sugar
  • 1 TBS minced garlic
  • 1 TBS light soy sauce
  • 1 tsp. sesame oil
  • 1â�„2 tsp. fresh ground pepper
  • 2 large Asian cucumbers, peeled and sliced or 2 regular cucumbers, seeds and pulp removed
  • 1â�„2 tsp. red pepper flakes or fresh hot peppers
  • 2 TBS sesame seeds, toasted
In a large bowl, stir together the first six ingredients. Add cucumbers, tossing to coat. Cover and chill 1 hour. Add pepper flakes and sesame seeds and toss. Serve immediately.
