  • 1 pie crust
  • 1 zucchini, sliced
  • Olive oil
  • Tomatoes, sliced
  • 1/2 cup fresh basil, chopped
  • 1/2 cup Parmesan cheese
  • 1/2 cup mayonnaise
  • Black pepper
Preheat oven to 400 degrees.
Pierce the pie crust and bake for 9 to 11 minutes. Remove from crust oven and increase temperature to 450 degrees.
Saute the zucchini in olive oil until tender. Arrange zucchini in pie crust; top with tomatoes. Mix the cheese, mayonnaise and basil together; spread over zucchini and tomatoes. Sprinkle with pepper. Bake until thoroughly heated.
