  • 1 box cake mix (white, lemon or yellow)
  • 2 tubs of frosting
  • 1 bag sweetened, shredded coconut
  • 28 white gum drops
  • 14 Junior Mints
  • 28 chocolate chips
Lightly spray baking tins for 14 regular-sized and 14 mini cupcakes (baking cups will not be used). Follow directions on cake mix box to bake cupcakes. Frost the top, sides and bottoms of each cupcake. To frost, frost the bottom first and then use a fork stuck into the bottom to hold the cupcake while you frost the rest. Roll the cupcakes in shredded coconut; then, working on waxed paper, set the cupcakes on their sides with the top of the smaller cupcake stuck to the bottom of the larger one to form the bear’s head. Add two white gumdrops to the top to make ears, a Junior Mint for the nose and two chocolate chips for the eyes.
