  • 2 cups all-purpose flour
  • 1 cup granola without raisins
  • 2â�„3 cup sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1â�„2 tsp. cinnamon
  • 1â�„4 tsp. nutmeg
  • 2 eggs
  • 2â�„3 cup unsweetened apple juice
  • 1â�„4 cup canola oil
  • 11â�„2 cups peeled, grated apples
Preheat oven to 400 degrees. Grease or put liners in 12 muffin cups.
In a large bowl, combine the first seven ingredients. In another bowl, whisk eggs, apple juice and oil. Stir into dry ingredients until just moistened. Fold in apples.
Fill muffin cups three-quarters full. Bake for 18 to 20 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
