NO-BAKE ENERGY BITES

Ingredients:
  • 1 cup oatmeal
  • 1â�„2 cup peanut butter or other nut butter
  • 1â�„3 cup honey
  • 1 cup coconut flakes
  • 1â�„2 cup ground flaxseed
  • 1â�„2 cup mini chocolate chips
  • 1 tsp. vanilla
Mix all ingredients together until thoroughly incorporated. Chill for a half an hour. Once chilled, roll into balls. Store in an airtight container and keep refrigerated for up to one week. Makes 15 servings (about 30 bites).
