  • 1?2 tsp. vanilla
  • 4 TBS honey
  • 23?4 cups water
  • 1?4 cup unsweetened applesauce
  • 1 egg, slightly beaten
  • 1 cup dried or fresh apple pieces
  • 1 TBS baking powder
  • 4 cups flour
  • 2 TBS ground flaxseeds, optional
Preheat oven to 350 degrees.
Mix the vanilla, honey, water, applesauce, egg and apple together. In a separate bowl, mix the baking powder, flour and flaxseeds together. Slowly add the wet mixture to the dry mixture, mixing until incorporated.
Pour mixture into muffin tins and bake for 11?4 hours or until toothpick inserted into center comes out clean. Makes 12 to 14 regular cupcakes or about 30 mini cupcakes.
