GLUTEN-FREE FRUIT COCKTAIL PUDDING

Ingredients:
  • 1 cup gluten-free flour
  • 1 tsp. soda
  • 1 cup sugar
  • Dash salt
  • 1 egg, slightly beaten
  • 1 (16 ounce) can fruit cocktail with syrup
  • 3/4 cup brown sugar
  • 1/2 cup small pecan pieces
  • Whipping cream
  • Maraschino cherries
Preheat oven to 350 degrees.
Sift together the flour, sugar, soda and salt. Combine the flour mixture, egg and fruit cocktail; mix thoroughly. Pour the batter into a greased 8 1/2- by 8 1/2-inch baking dish. Sprinkle brown sugar and pecans over batter. Bake for 45 minutes or until done. Serve with whipped cream and cherries.
