  • 1 can spinach
  • 1 can collard greens
  • 1 can turnip greens
  • 1 can mustard greens
  • 1/2 cup gluten-free cornmeal
  • 1/2 cup gluten-free flour
  • 1 tsp. baking soda
  • 1/8 cup sugar
  • 1 egg
  • 1/8 cup olive oil
Mix the greens together and let them drain.
Preheat oven to 375 degrees.
Mix the dry ingredients together. Add the egg and oil and mix well; set aside. Pour the greens into an 8- or 9-inch baking dish and pour the cornmeal mixture over top. Cook for 20 minutes or until golden brown. To make a complete meal, add 1-2 cups chopped ham to the recipe.
