Squash Casserole
Vegetables & Side Dishes

  • 2 or 3 yellow squash and?or small Zucchini, sliced
  • 4 or 5 medium tomatoes,
  • sliced
  • 1 medium onion, chopped
  • 3 eggs
  • 1/4 cup bread crumbs
  • Dash sugar
  • Salt and pepper, to taste
  • 1 cup mild cheese, shredded (Muenster, but cheddar or mozzarella ar good)
Preheat oven to 350 degrees.
Slice squash and cover the bottom of a 6- by 6-inch baking dish. Slice tomatoes and lay them over the squash. Add chopped onion.
Whip eggs and pour over vegetable mix. Sprinkle a little sugar, and salt and pepper to taste. Cover with cheese. Cover with bread crumbs.
Bake for about 45 minutes, until the casserole is brown on top and not too much moisture is left bubbling in the dish.
