STUFFED SQUASH
Vegetables & Side Dishes

Ingredients:
  • 4 to 6 big squashes
  • 1 onion
  • 2 package Stove Top stuffing mix, plus required ingredients to prepare
  • Shredded or sliced cheese of choice
Cut each squash in half lengthwise. Microwave each on high for 1 minute (just enough so that flesh scoops out easily but shell does not lose its form).
Chop onion and flesh of squash (reserving shells). Sauté until soft.
While vegetables are cooking, prepare stuffing according to package directions. Mixed cooked vegetables into stuffing.
Lay or sprinkle cheese lightly over bottom of each squash shell. Fill shells with squash mixture. Lay or sprinkle cheese over the top of each.
Bake for 30 minutes.
