BOO’S DIRTY RICE JABALAYA

Ingredients:
  • 2 lb. ground beef
  • 1 lb. hot smoked sausage, chopped
  • 3 onions
  • 5 stalks celery
  • 1 bell pepper
  • 2 bay leaves
  • 10 cloves garlic, chopped
  • 1 package beef broth
  • Salt
  • Cayenne pepper
  • Worcester sauce
  • Parsley
  • Green onion tops
  • White rice, cooked
First, make a roux. Chop vegetables.
Add onions to roux, then add rest of vegetables (including parsley and green onion) and seasonings. Simmer for 30 minutes.
Brown ground beef and sausage. Add at least one package of beef broth or stock (may need to add some water as it cooks).
Just before serving, mix into white rice (in a separate pot).
