SAUERKRAUT AND CHICKEN SAUSAGE

2 tsp. extra virgin olive oil
1/2 onion, chopped
1/2 apple, cut into small pieces (no need to peel)
12-oz. package Sweet Apple Chicken Sausage
Sauerkraut (homemade preferred), enough for 4 servings
In a medium-size skillet heat olive oil on medium heat. Add onion and cook 2 or 3 minutes. Add apple pieces and cook 3 minutes more. Slice each sausage on the diagonal into eight pieces. Add sausage pieces into pan and cook 3 minutes. Add sauerkraut with some of its juices and cook until heated through.
