  • Enough turnip greens to fill a large pot twice
  • 2 or 3 TBS bacon drippings
  • Salt and pepper, to taste
  • Water
Fill pot halfway up with water and bring to a boil.
While the water is heating, clean each individual turnip leaf under running water and rip the stalk and main vein out, discarding the stem and saving the leaf.
Once the water is boiling, pile the leaves high in the pot, pressing down on them until they wilt, then continue to add more leaves, stopping to press them down and waiting for them to wilt. After all the leaves are added to the pot, add bacon drippings to the pot along with salt and pepper.
Cover pot, reduce heat to a simmer and cook 3 to 6 hours until the greens are fork-tender.
