  • 1 9-inch pie shell, baked and cooled
  • 2 to 3 large tomatoes, peeled and sliced
  • salt and pepper to taste
  • 2 to 3 green onions, chopped
  • 1 TBS fresh basil
  • 1 TBS fresh chives, chopped
  • 1 cup mayonnaise
  • 1 cup sharp cheddar cheese, grated
Preheat oven to 350 degrees.
Sprinkle tomatoes lightly with salt and drain for 15 to 20 minutes.
On a cooling rack, layer tomatoes, onions, salt, pepper, basil and chives into pie shell.
Blend mayonnaise and cheese together and spread on top of the pie.
Bake 30 minutes or until the top is lightly brown.
