JC’s Risotto

  • 1 cup uncooked Arborio rice
  • 2 TBS olive oil
  • 2 TBS butter
  • 4 green onions, chopped
  • 3 cups chicken or vegetable broth
  • Salt and pepper, to taste
Saute onions in butter for 3 minutes. Add rice, stirring for about 2 minutes. Stir in 1 cup broth. Continue cooking and stirring until liquid is absorbed. Gradually add another cup of broth, cooking and stirring until absorbed, then add final cup of broth and do the same.
