Apple Nut Cake

  • for cake:
  • 11?2 cups vegetable oil
  • 3 eggs
  • 2 cups sugar
  • 2 tsp. vanilla
  • 1 tsp. baking soda
  • 3 cups plain flour
  • 1 tsp. salt
  • 1 cup chopped pecans
  • 1 cup coconut
  • 3 cups diced apples
  • 1/2 cup raisins
  • for topping:
  • 1 stick butter
  • 1 cup brown sugar
  • 1 small can evaporated milk
Make cake: Preheat oven to 350 degrees. Grease and flour a bundt pan.
Mix together all cake ingredients. Pour into pan and bake for one hour.
Prepare topping: Combine ingredients. Bring to a boil in a pan. Cook for two and a half minutes after coming to a boil.
Pour over hot cake.
