Pumpkin Pie

Ingredients:
  • 2 cups fresh cooked pumpkin
  • 2 TBS flour
  • 1?2 cup sugar
  • 2 egg yolks
  • 1?4 tsp. ginger
  • 1?4 tsp. cinnamon
  • 1?4 tsp. nutmeg
  • 9-inch baked pie shell
* To cook pumpkins, stew fresh pumpkin slices until tender. Cook down until water evaporates. Measure out 2 cups.
Combine flour, sugar and spices in a pot. Mix with the pumpkin and add yolks. Cook over medium heat until thick.
Pour into pie shell. Serve with whipping cream or make meringue.
