  • 1 large can salmon
  • Black pepper, dash
  • 1/4 cup lemon juice
  • 10 saltine crackers, crushed
  • 2 eggs
Preheat oven to 375 degrees.
Debone salmon and remove skin. Flake salmon.
Mix thoroughly with pepper, lemon juice, cracker crumbs and eggs.
Shape into patties or loaf. Spray pan with nonstick spray for even browning.
Bake about 45 minutes in oven, turning over after 30 minutes.
