Sweet Potato Pie
Contributed by:
  • 4 large sweet potatoes, baked cooled and mashed
  • 4 eggs
  • 1 can evaporated milk
  • 30 packets Splenda sweetener
  • 1 lb. margarine
  • 2 tsp. vanilla
  • 1/2 tsp. lemon flavoring
  • 2 tsp. nutmeg
  • 1/2 tsp. cinnamon
Mix on slow speed — this removes strings in potatoes.
Pour into 9-inch pie shell and bake at 350 degrees for 30 minutes or until desired brownness is achieved. Note that a pie baked with Splenda will not brown as much as a pie baked with sugar. At least two cups of sugar may be substituted for the Splenda.
