Glazed fruit tartlets

  • 1/4 pound butter, softened
  • 1/2 cup sugar
  • 1 egg yolk
  • 1 TBS orange juice
  • 1 tsp. vanilla extract
  • 1 tsp. grated orange peel
  • 1 1/3 cups all purpose flour
  • 3 to 4 cups fruit (sliced bananas, well-drained Mandarin oranges, whole or sliced strawberries, seedless grapes or blueberries)
  • Glaze:
  • 1/2 cup sugar
  • 1 TBS and 1 1/2 tsp. cornstarch
  • Dash of salt
  • 2 tsp. grated orange peel
  • 1 TBS. orange flavored liqueur.
Preheat oven to 350 degrees. In medium bowl, beat butter until fluffy. Gradually mix in sugar. Add yolk, orange juice, vanilla and orange peel. Mix in flour. Press dough into 2 or 3 tartlet molds. Bake 15 to 20 minutes or until lightly browned.
Cool in molds for 10 minutes. Use the tip of a knife to remove the shells. Cool on racks.
Fill shells with fruit. Only one type of fruit per tartlet.
Mix all ingredients together. Spoon cooled orange glaze over fruit.
Makes 27 tartlets.
