Caldo de papas (Spanish potato soup)

1 pound potatoes
1 tsp. paprika
1 tsp. food coloring (Saffron)
1/2 bunch of cilantro
1 chicken bouillon cube
1 garlic clove
1 handful of fideos or rice (fideos are small rice-shaped noodles or pasta found in the hispanic section of grocery stores)
2 hard-boiled eggs
Cover the bottom of the pan with olive oil. Peel, wash and cut potatoes into squares and add to the pot. Add the rest of the ingredients except the fideos?rice and the eggs. Pour in 1/2 gallon of water.
Let the mixture boil for about 5 minutes and add the fideos?rice. Then allow to boil for about 15 or 20 minutes or until potatoes are soft and fideos?rice are done.
Chop the eggs and add to the soup once it is cooked.
