Vegetables & Side Dishes

  • 1 medium butternut squash
  • 2 TBS olive oil
  • Salt and pepper, to taste
  • 4 cups mashed potatoes
Carefully peel squash and remove seeds. Dice into 1-inch squares. Toss with olive oil and salt and pepper in a large bowl. Set on a flat oven tray and bake at 375 degrees or until tender, approximately 20 minutes. Let cool 10 minutes.
You can snack on the squash at this point. It is recommended as a side dish.
Dice squash in a food processor and process to a slightly chunky paste. Mix with your favorite mashed potato recipe.
Yield: 8 servings
