Cracklin' Corn Bread

Ingredients:
  • 1/2 cup vegetable oil
  • 3 cups yellow self-rising corn meal
  • 1 1/2 to 2 cups buttermilk
  • 2 eggs
  • 1 cup pork cracklings
Preheat oven to 425 degrees. Heat oil in pan in oven until hot.
Mix all ingredients well. Pour batter into ban. (Do not mix the oil into the batter; some will be absorbed while cooking.) Bake until golden brown (about 25 minutes).
