Potato Salad
Vegetables & Side Dishes

Ingredients:
  • 10 lbs. russett potatoes
  • 1 tsp. salt
  • 3 cups mayonnaise
  • 8 boiled eggs
  • 1 medium onion
  • 2 stalks celery
  • 1/4 cup diced green peppers
  • 1 small jar red pimentos, drained
  • 1 cup salad relish
  • 2 TBS mustard
  • 2 TBS celery seed
  • 2 TBS sugar
Dice and boil potatoes until fork-tender; drain. Refrigerate until completely cool.
Mash eggs thoroughly.
Mix eggs, potatoes and all other ingredients. Serve cold.
