Genella T’s Rich Chocolate Cake

  • 3 cups flour
  • 2 cups sugar
  • 2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup baking cocoa
  • 2 tsp. vinegar
  • 2 tsp. vanilla extract
  • 2/3 cup canola oil
  • 2 cups hot coffee
  • Almond-flavored buttercream frosting
  • Baking chocolate, melted
Preheat oven to 350 degrees.
Sift dry ingredients together in a large bowl and make two wells in the mixture. Pour vinegar into one and vanilla into the other. Stir in oil and coffee. Mix on medium speed for about 2 minutes.
Pour into ungreased 9- by 13-inch pan and bake for 30 to 35 minutes.
Leave cake in pan to cool. When cool, frost the cake with almond-flavored buttercream frosting. Drizzle melted baking chocolate over top of frosting. The cake is best served the following day.
