BEST FUDGE CAKE

Ingredients:
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1/2 cup corn oil
  • 1 cup water
  • 1 stick margarine
  • 6 TBS cocoa
  • 1 tsp. vanilla
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 tsp. baking soda
Preheat oven to 350 degrees.
Put flour and sugar into a large bowl.
In a saucepan, combine oil, water, margarine, cocoa and vanilla; bring to a boil. Boil for one minute, stirring constantly. Pour liquid mixture into dry. Mix until well blended. Add remaining ingredients. Mix well.
Bake in a 9- by 13-inch dish for 30 to 35 minutes.

Icing:
4 TBS milk
5 TBS cocoa
1 stick butter
1 tsp. vanilla
1 box powdered sugar

Heat and stir cocoa, milk and butter until butter is melted. Remove from heat and beat in vanilla and powdered sugar. Blend well. Spread onto warm cake.
