Baked Vidalia Onion Dip with Organic Baguette

  • 1 large Vidalia onion
  • 1 clove garlic, minced
  • 1 tsp. ground sea salt
  • 1 TBS olive oil
  • 1/2 cup vegan mayonnaise
  • 1 (8 ounce) container organic cream cheese, softened
  • 1 TBS dried parsley
  • 1 cup organic mozzarella cheese, divided
  • Organic baguette or pita chips
Cut onion in half, then into thin slices. Sauté onions, garlic and salt in olive oil for 15 minutes or until onion is caramelized.
Cream together mayonnaise and cream cheese, then add parsley and half of the mozzarella. Add onion mixture and stir to combine.
Spoon into baking dish and top with remaining mozzarella cheese.
Bake for 30 minutes or until bubbly. Serve with pita chips or organic baguette.
