Seared Lime Chicken

  • 4 chicken breasts
  • Salt and pepper, to taste
  • Coconut oil
  • 1 cup lime juice
Heat a cast iron skillet to medium high heat. Preheat oven to 350 degrees.
Sprinkle salt and pepper over chicken breasts. Put coconut oil into skillet and sear chicken breasts on each side until golden brown outside but not fully cooked.
Brush the chicken with lime juice. Place in oven for 15 minutes. Make sure the chicken's interior temperature is at least 165 degrees before removing from oven. After each breast is done, brush it once again with lime juice.
Serve while hot.
