Dark Rum Mojito

4 mint leaves
1 lime, sliced
3/4 ounces simple syrup (1/4 cup sugar reduced into 1/4 cup water)
1 1/2 ounces dark rum (such as Meyer’s or Bacardi Select)
2 ounces club soda
In a glass, mash the mint and limes (with the rindon) until a fine pulp is created. Add the simple syrup and muddle more.
Add in the rum and club soda. Stir or shake until well mixed. Put ice in a highball glass and strain (this removes the rind) the mixture into the glass. Garnish with a lime wedge and a sprig of mint.
Yield: 1 glass
