CHICKEN PIZZA
Entrees

Ingredients:
  • Pizza crust
  • Chicken breast (approximately one per pizza)
  • Italian seasoning
  • Olive oil
  • Onion (optional)
  • Pizza sauce
  • Dried basil
  • Mozzarella cheese
  • Fresh basil, chopped
Pre-heat oven to 450 degrees (or according to the pizza crust package recommendation).
Pound out the chicken breasts to tenderize. Coat lightly with Italian seasoning, and sauté in olive oil until done. Don’t overcook.
Remove from heat and allow to cool. Cut into bite-sized pieces. Sauté onions to caramelize and soften. Lightly brush olive oil onto pizza crust.
Cover the crust with pizza sauce. Sprinkle with Italian seasoning and dried basil. Lightly sprinkle cheese to help the other ingredients stick. Add chicken and onions. Add fresh basil to taste. Cover with cheese. Bake for approximately 8 minutes (or according to the crust package directions).
