  • For the cake:
  • 1 package golden vanilla cake mix
  • 1 package coconut cream pudding
  • 1 8-ounce can crushed pineapple
  • For the icing:
  • 8 ounces cream cheese
  • 1 stick butter, softened
  • 16 ounces powdered sugar
  • 1 cup whipped topping
  • Crushed pineapple, optional
For the cake:
Prepare cake batter according to the package instructions. Blend dry pudding mix into the batter. Fold in the pineapple. Put into cupcake pan, and bake as directed.
For the icing:
Beat cream cheese, butter and sugar. Whisk in whipped topping. Fold in crushed pineapple, if using.
