Sweet Potatoes with Onions
Vegetables & Side Dishes

  • 2 medium onions
  • 1â�„3 box of light brown sugar
  • 4 lbs of sweet potatoes
  • 1â�„2 maple syrup
  • 2 sticks of butter
Peel and slice the onions and line the bottom of the Dutch oven with the slices. Sprinkle half of the brown sugar over the onions. Peel and slice the sweet potatoes. Layer the sweet potato slices over the onions. Drizzle the maple syrup over the top of the sweet potato slices. Sprinkle the remainder of the brown sugar over the top of the ingredients. Slice the butter and spread around the top of the mixture. Add water until visible through the potatoes. Cook at 350 degrees for one and half hours. Check occasionally and reduce the heat under the Dutch oven if boiling becomes rapid. Serves 20-30.
