Banana Pudding

  • 1 cup sugar
  • 1â�„2 cup. plain flour
  • 3 eggs, separated
  • 3 cups milk
  • 1 tsp. vanilla flavoring
  • 1â�„2 stick of butter
  • 4 bananas
  • 1 box of vanilla wafers
(Prepare cornstarch mixture of meringue recipe first so it can be cooling.)
In a thick pot or double boiler, mix sugar and flour together. Add egg yolks and milk and blend until smooth. Heat over medium heat until thickened, stirring constantly. Remove from heat and add vanilla and butter.
Prepare the meringue (recipe at right).
Layer wafers and two bananas, sliced, in the bottom of a 9 x 13 dish. Pour half of the custard over the layers. Add another layer of wafers and banana slices. Pour remaining custard over second layer. Add the rest of the wafers on top of custard.
