Never-Fail Meringue
Desserts

Ingredients:
  • 1 TBS cornstarch
  • 3 egg whites
  • 6 TBS sugar
  • dash salt
  • 1 tsp. vanilla
In saucepan, blend 1 TBS cornstarch and 2 TBS cold water. Add 1�2 cup hot water. Cook, stirring until clear and thickened. Let stand until completely cold.
Beat egg whites on high until foamy. Gradually add sugar and beat until stiff but not dry. Turn mixer to low speed. Add dash salt and 1 tsp. vanilla. Gradually beat in cold cornstarch mixture. Turn mixer to high speed and beat well.
Spoon meringue over custard and wafers, sealing completely. Brown slowly on broil.
