Coconut Cake Frosting

Ingredients:
  • 2 egg whites
  • 11â�„2 cup sugar
  • 1â�„4 tsp. cream of tartar
  • 1â�„2 tsp. vanilla
  • 5 scant TBS cold water
Mix all ingredients and cook in double broiler for 12 minutes, all the while beating with an egg beater. Remove from heat and beat until cool. Spread some over the coconut layer over the bottom layer of the cake and lay the top cake layer. Spread cake with frosting. Sprinkle frosting with reserved shaved coconut.
