  • 2 lbs. fresh green beans
  • 1 piece cured fatback, about 4 inches long and 11â�„.2 inches thick
  • Salt, to taste
String and cut beans. Slice the fatback into 5 or 6 slices. Put beans and fatback into saucepan. Pour in water just until you can see the water through the beans. Bring to boil then allow to simmer until all of the water runs out, without burning the beans and without adding more water. (Beans should be tender).
