Breaded chicken breasts

Heat cooking oil in frying pan. Split the chicken breast through the middle almost all the way through and open it to have one large, flat piece. Beat egg slightly in a pie dish. Dip chicken into egg, wetting both sides. Then dip chicken into bread crumbs. Put in frying pan with heated oil and cook until done on the bottom; turn and cook the other side until done.
Good side dishes with this are Mexican-style rice and a salad.
