Memphis Style Rib Rub

Ingredients:
  • 1/4 tsp. cayenne pepper
  • 1 tsp. oregano
  • 2 tsp. paprika
  • 1 tsp. sugar
  • 1/4 tsp. pepper
  • 1 tsp. salt
  • 1 tsp. chili powder
Mix spices together. Use the rub to prepare ribs or chicken.

For ribs:
Remove membrane from underside of ribs. Rub vegetable oil on underside of ribs then apply rub mixture. Repeat for top side of ribs. Wrap in foil and refrigerate 4-8 hours or overnight. Cook in oven at 300 degrees for 3 hours.

For grilled chicken:
Mix spices together and coat both sides of chicken. Grill chicken approximately 8 minutes on each side or until internal temperature reaches 170 to 180 degrees. Top with grilled pineapple.
