ESCALLOPED CORN
Vegetables & Side Dishes

Ingredients:
  • 1 can fiesta corn
  • 1 can cream-style corn
  • 1â�„4 cup sweet onions, finely chopped
  • 1 oz. chopped pimentos
  • 2 cups crushed saltine crackers
  • cooking spray
  • 3 TBS butter
Preheat oven to 375 degrees. Mix the corn, onion, pimentos and 11�2 cups of crackers. Spray baking pan with cooking oil. Pour the mixture into baking pan. Coat top of mixture with remaining 1�2 cup of crackers. Melt butter and pour over cracker topping. Bake for 45 minutes
